The Savannah Fine Cutlery Orion 8-inch Chef's knife is a one piece blade with full tang of high carbon stainless steel (5CR15MoV). The steel is heat treated to a 54 - 55 HRC (Rockwell measurement) for long edge life and easy maintenance in honing and sharpening.
