Description
- Journey across the Spice Route but made in the USA this silky eggplant relish inspired by the flavors of Gujrat, Western India is a classical achaar or Indian pickle. Slow cooked in sesame seed oil, this pickle adds a tangy, sweet and salty heat to all that you eat. The flavors are unique citrusy and nutty from curry leaf, warmth and spice from turmeric and mustard all combine to deliver subtle flavor and rich golden color.
- Good with everything pair with: alpine cheeses, aged cheddar, gouda or fontina. The eggplant pairs seamlessly with lamb or goat, grilled and smoked oily fish and meaty white fish. Ideal with eggs slather on flat bread and top with an omelette; drizzle on hard boiled eggs dusted with cumin. Perfect drizzled on hummus! Drizzle on grilled vegetables; use as a base for stews; or, thin with a tablespoon or two of warm water, emulsify with prepared mustard to use as dressing.
- Ingredients stripped bare confit of fresh diced jumbo globe eggplant, minced ginger, diced garlic, green chilis and curry leaves cooked in Indian sesame seed oil with spices and no added colors, preservatives, artificial sweeteners or MSG.
